I just found these two little egg poachers online and wanted to try something different in the kitchen with them from my usual poached egg on toast. I began to poach my eggs and look through my fridge for some inspiration. I found an Aubergine and decided to use that as a twist to my normal everyday salad. I fried it and placed it on top of my salad. By the time I did that my eggs were ready to go on top, creating the above. It was so yummy and very healthy full of protein and a great idea for a lunch or after gym meal.
